Air Fryer Chicken Wings
Juicy chicken wings with crispy skin made in your air fryer. No more having to send your wings back to the kitchen for being undercooked!
One thing you have to know about me is that I love a chicken wing! Well, chicken in general. I eat Popeyes whenever I’m stressed, hopefully, one day they’ll sponsor me LOL. These air fryer wings are perfect for the days when “girl dinner” is winning or you don’t feel like funking up the house with the smell of fried chicken and leftover oil.
The secret to these perfectly, crispy chicken wings is the use of baking powder. The powder draws out the extra moisture left in the chicken’s skin which makes is crisp up in the air fryer or oven while leaving the chicken nice and juicy. For an even crispier chicken wing (even when frying) let the chicken wings dry out in the fridge on a cooling rack overnight or at least 2 hours.

What You Need:
1 to 2 lb Chicken Wings, you can use both drummettes and/or flats
1 tbsp High Smoke Point Oil, canola, sunflower, avocado, or peanut oil.
2 tbsp Granulated Garlic
1 tbsp Coarse Black Pepper, or to taste.
Kosher Salt, to taste.
1 tbsp Smoked Ground Paprika
1 tbsp Dried Oregano
1 tbsp Mustard Powder
1 tbsp Chili Powder
1 tbsp Baking Powder, can substitute for cornstarch however baking powder is my favorite method.
Lemon Zest, one lemon.
What to Do:
Pat dry the wings with a dry paper towel or allow to dry out in the fridge for up to 2 hours.
Preheat your air fryer for 5 minutes at 400F.
In a large bowl, toss the wings in the oil until they are fully covered.
Mix together the dry ingredients in a small bowl and coat the wings with the seasoning blend. Be sure to massage it into the chicken.
Spray the tray or pot of your instapot with non-stick spray or rub with a tablespoon of oil and place the chicken flat in the tray/pot.
Cook chicken on “air fry” for 25 to 30 minutes being sure to rotate the chicken every 10 minutes. I like mine crispy so I usually go the entire 30 minutes.
Zest with fresh lemon and garnish with your favorite (parsley flakes) or mine, fresh chives from my garden :)
