Elle's Secret Caesar Dressing

The feminine urge to order a caesar salad and fries at a restaurant is too real. I didn’t feel so seen until I saw the TikTok girlies talking about it. Don’t let there be garlic aioli or truffle fries- they’ll have to roll me out of the joint. I can’t believe I went from not liking caesar dressing to absolutely loving it so much that I’m craving one as writing this newsletter.
You’d think caesar dressing had some old Italian backstory dating to the 1800s but it was actually created by an Italian chef who migrated to Tijuana, Mexico in 1920. Like many of our best creations, Caesar Cardini took basic items found in his kitchen: lettuce (preferably the stalks), olive oil, raw egg, croutons, parmesan cheese, and Worcestershire sauce to make one of our favorite sauces.
I’ve had the opportunity with working with many caesar salad recipes at very popular restaurants in Detroit, this one has been created from different techniques and ingredients such as the need for heavy cream or whole anchovies, or just the paste.
